Second fermentation infected?

    Hi,

    Had a good first fermentation, then siphoned to second but after two days there is some white residue near the top of the fermenter? What is this .. it's not from the oxiclean as I rinsed and there was nothing there. Could this be from when removing the siphon while it was still dripping?

    Thanks for any help as this beer is smelling awsome and I don't want it to go to waste.

    What recipe did you use for the Hoegaarden Wit ... this is high on my to make list :rockin:

    It sounds like you're not worried, which is good. My guess is that when you racked into secondary you stirred up some sleeping yeast and restarted fermentation that hadn't quite finished. That white residue is probably some very tiny yeast or krausen residue.

    Thats my guess anyways.

    I did an Extract version and a full boil:

    8oz Belgian Aromatic malt
    8oz flaked wheat
    4oz flaked oats
    4oz rice or oat hulls

    Steep at 150 for 30 minutes and sparge

    Boil:

    1oz Kent Goldings @60 min (I used Mt Hood here b/c the AA were closer to recipe)

    .5oz Kent Goldings @15 min
    .25oz bitter orange peel @ 15min
    3/4tsp crushed corriander seed @ 15min
    1/8tsp crushed cumin seed @ 15min

    .5oz Czech Saaz @ 2 min
    .5oz bitter orange peel @ 2min
    1/2tsp crushed corriander seed @ 2min
    1/8tsp crushed cumin seed @ 2min

    Yeast:

    Wyeast 3463 Forbidden Fruit

    I don't know how those yeast floaties get into the secondary but they do all the time.
