If you had a vial of this sitting patiently in the fridge, what recipe would you hire this yeast for???

I use it in my house pale ale and it is great in that. I've also used it for a blonde ale and ipa and was great in both as well. It is my go to yeast, on on the sixth gen of my last vial and still going strong

I've used it for ipa's, dipas, stouts... The stuff is a freakin beast. Attenuates well, great flavors, awesome for big beers

Never even thought to use it in a stout. I just brewed in the last month two stouts, used a wlp004 and wlp500.

I have an IPA fermenting currently and used safeale 05

Would it work well in an amber ale?

I don't see why not. I find that 090 is very neutral with a slightly fruity taste that makes it great for all kinds of ales. I did it on a chocolate milk stout and it was great. It's basically the same thing as 001 but ferments faster and I believe has a higher alcohol tolerance

Because it's judgement that defeats us.

Well, I DO have a jar (not vial) of SDSY in the fridge, and I will use it to make a Black IPA next week. I think the one I got may have been Chula Vista Adequate Yeast, though, because my attenuation was no better than WLP 001, and neither was flocculation. Nothing wrong with it, but not Super either.

Bahahaha I think the adequate after chula vista is a bit redundant though. I find that it ferments out nice with maybe only 2-5% better attenuation and haven't noticed really any difference in floccing. The thing I like most about it is how clean it ferments.

I know when using yeast on high abv beers like 8% + your not supposed to rewash yeast however due to this yeasts tolerance for higher abv beers would this yeast be an exception and it would be ok to wash it after using it say on a dipa.
