    Which one and why?

The Fermentis site is so frustrating to use when trying to choose between their dry yeasts.

    Thanks!

Depends on what you're going for. The s-05 will ferment clean without contributing many esters (assuming proper temp control), and the s-04 will provide a little more fruitiness like an English ale yeast. Either one could work well.
