Recipe feedback - Cascade Smash IPA

    Hey guys,

    I bought a pound of Cascade hops a year ago and ended up not using nearly as much as I thought I would, so they've been in my freezer in vacuum-sealed bags since then. I've got an empty slot in my pipeline, and I thought I'd brew an IPA this weekend using nothing but Cascade hops to both showcase the hop, and use up some of the supply. I was hoping for some feedback on the recipe I came up with. I know it's not strictly a "Smash" because of the half-pound of Carafoam, but I can't resist including a little for the head retention and lacing it imparts. Here goes:

    Cascade Smash IPA
    5 gallons, All Grain
    O.G.: 1.064
    Bitterness: 70.5 IBU
    Color: 4.7 SRM
    Est. ABV: 7.0%
    60 minute boil
    Single infusion, batch sparge, light body (148° F mash temp for 60 mins)

    13 lbs Pale Malt (2-row)
    8 oz Carafoam

    3 oz Cascade @ 60 minutes
    2 oz Cascade @ 5 minutes
    2 oz Cascade dry hop

    I'm going to add Irish Moss at 10 minutes to clear, I'll ferment with 2 packets of rehydrated US-05, and I'll cold crash and fine with gelatin. Keg carbonate.

    Thoughts?

    I like it! I would probably go with a schedule more of FWH/15/5/0, as I love the flavor hops addition in IPAs and especially with cascades.

    I'd go with the FWH addition giving 30-40 IBUs, and then use 1-2 oz per late hops addition.

    Like this:

    1-2 oz FWH (depends on the actual AAUs) to 35 IBUs
    1 oz 15 minutes
    1 oz 5 minutes
    1 oz 0 minutes
    1-2 oz dryhop

    Well, you heard it from the first lady of HBT herself. And I agree. Yooper's hop schedule will get you more flavor and aroma, whereas the one you had originally would have been much higher in straight bitterness and lower in flavor/aroma (though not devoid).

    Thanks Yooper, I'm not even going to question you, I just updated the recipe. :) Your changes drop the IBU's down to 60 from 70, but that will probably still be fine. I'll be brewing this sometime this weekend.
