When you bought your kettle, were your intentions to start with 5 gallons and move up to 10?

If you are brewing 5 gallons in this huge pot. where did you mount your thermometer. I have run into a problem on where to mount mine.

According to the BYO website it says the thermometer should be mounted 7 inches from the bottom. When I filled the kettle with 5 gallons of water, it on reaches to 4 1/2 inches. What am i doing wrong?

Why do you need a thermometer mounted in your boil pot? Seems to me it would only get in the way.

The only time I care about the temp in my pot is when chilling to pitching temp. I just stick the probe from my digital thermometer in the wort right before flameout and I'm all set.

If you really want to mount one in there, put it at 4". It won't make any difference.
