Partial Mash American IIPA - Grain and Hops Timing advice

    Here's a recipe I'm planning on doing. I've done it once before as an all-extract and was pleased with the results, but wanted to try a partial mash to get some better flavours. I've also upped the hop bill (1oz more centennial and amarillo than previous, 2oz more citra) as while it was excellent when young, the hop aroma faded noticeably after aging in the bottles a few weeks.

    Id definitely scrap to 40 and 30 and maybe even 15 min additions and go for a massive hopstand at flameout. Don;t waste your hops on mid-boil additions

    I would probably move your 40 minute Centennial back to 60. Since you are doing a partial boil you'll lose IBUs when topping off.

    I do partial boils myself and have been going big on the 60 minute addition to ensure a good bitterness.

    Also maybe consider more hops in a 30 minutes steep before chilling. Depends on how much you like hops ;-)

    I'll do a combo of these two - how's the following look?

    That puts it at an estimated 95 IBU, and more hops towards the end.

    I'm also thinking of racking to a 5gal glass carboy and doing an extended secondary for the dry hop.

    Also, will one package of the S-05 be enough to bring the gravity down to where I want it?

    I'd go with 1.5 oz of Centennial for 60 and add more late addition hops for the additional IBUs. 2.5 @ 60 may be a bit much

    Also looking at your grain bill, why the Amber malt? Never seen that in an IPA, it may leave it more malty and sweet. Unless of course that's what you're intending.

    1 pack of rehydrated US05 would be ok, but 2 would be best. My last IPA with 1 pack of 05 had a SG of 1.077 and finished at 1.014. I was hoping for 1.010 or lower.

    I have some amber kicking around the house that I'd like to finish off - that's the main reason haha! I've used the combo before (light + amber) with good results.

    I'll swing by the LHBS tomorrow and grab a 2nd pack of the US05 - I've only got 1 pkg currently. I also have 1 pkg of notty, but I'd rather stick to a single strain.

    I think that looks great, I would definitely agree with 2 packets of yeast if you arent doing a starter though. But you could easily get away with Nottingham and US-05 they perform similarly and flavor profiles are about the same
