Oregon fruit question

    Wanted to know how some of these oregon fruit cans taste with beer. Is there some flavours out there that don't taste right with beer? The flavours i'll be using in the near future would be blackberry,blueberry,and cherry, Just want some input.

    I've had better luck with fresh fruit (I find it easier to work with and the flavor tends to be a bit more nuanced), but all those varieties can certainly work in beer. I think the key is matching the right base beer to match with the fruit you choose. I really like the combination of sour beer and fruit (berries in particular), but things like hops are fruit can match nicely too (especially tropical or citrus). Even a dark beer can do well with fruit, although I tend to like the “cooked” flavor of jam for those beers. The one thing I don’t really care for is a bland American wheat beer, the whole thing is just sort of bland with fruit aromatics, but no real flavor.

    I do a sweet stout that I add cherry purée to in secondary. This kicks up a true secondary fermentation and leaves a nice cherry tartness which balances nicely with the sweetness of the stout.

    I'm planning on doing a wheat beer with raspberry soon.

    I use the Oregon purees with good results.
