Nottingham is quite the bugger

    I had initially intended to brew 10 gallons of my house pale ale 2 weekends ago, but during that time had also pulled the trigger on a few parts, including a fridge, for my latest project. My brother finally moved out of my apartment, which freed up a bit of space for my fermentation chamber! Once SWMBO agree'd, I put together a cheap and easy fermentation chamber which will now allow me to Lager!

    Blah blah blah down to the brew. I decided to wait on the 10 gallons of brew because I used Nottingham for this and had read that it starts to produce alot of off flavors if above 68f, and i'm glad I waited!

    I brewed on Sunday, and today it is sitting at 57f ambient in the fridge, and this bad boy yeast is kickin strong! I'm just sitting here at work thinking, "I should have used a blow off tube..."

    Nottingham is a BEAST! One of my faves, right up there with S-04.
