No OG

    Hi guys. I brew my first all grain BIAB on Saturday. I did not check my OG. There are reasons for it but it's not important. What do I do now. It's a blonde ale 4 gallons. The first 24 hours it was crazy activity, but now nothing. So should I take a gravity reading now and one in 5 days to compare it? Thanks in advance.

    Airlock activity isnt a good indication as to fermentation happenings. I would let it sit for 10-14 days then check it out. Let the yeast do their thing, clean up after themselves and then bottle or keg.

    Not really anything you can do. I would just let it go for 2-3 weeks to let the yeast finish up an clean up, then check the gravity to make sure it is stable for 2-3 days, the package it up and let it carbonate. You won't know what your ABV is, but you will be able to guess at it by using your FG and the target OG of the recipe. it wont be exact, but it will give you a general idea.

    Without the OG the only thing missing is that you cannot calculate your ABV. I would wait until about day 14 to take a reading. Then on day 15 or 16, if the FG reading is stable you can go ahead and bottle.

    At 24 hours, especially if the temperature of the fermentation is too warm, it may have finished the active portion of fermentation. But it may take 3-7 more days for fermentation to truly finish.

    Wait until day 10-14 then, maybe, take some final gravity readings. Longer is not a bad idea, 10 days, IMO is minimum.
