No foam during aeration

    Background: I made a coconut IPA yesterday that required 7 oz of toasted coconut at 176 degrees for a 10-15 minute steep post boil. I used a hop bag for the addition.

    Potential issue: I transferred the wort from the BK to a catalyst fermentation system and let it sit for about 3 hours. I aerated the wort with an aquarium pump with SS stone for 20 minutes and it produced zero foam. I’ve never seen this before. I pitched the US05 anyway and 6 hours later activity has started with a bubble every 30 seconds or so.

    Questions: Has anyone had this happen before? Is it the coconut oils? Will it mess with the finished beer?

    I found that if I don't boil the stone in water between uses it will not produce much foam. Even then it won't do so on occasion, and I rarely use extra ingredients, so for me it's a mystery. I'm still looking for a good method of aerating as the wort is tranferring to the fermenter. That seems easiest. There's just not enough flow/pressure to use something to create a mist.

    It's definitely the oils. They probably won't affect the beer much if at all as the yeast will strip them during fermentation, much like any anti-foaming agent that if used properly won't make it into the beer but will drop out completely with the yeast.

    Thanks. This is my first time adding anything extra like coconut. I submerge the stone in star stan with the pump on after a brew and before so not sure.

    You should have still been able to see/hear bubbles rising to the surface even if foam formation was inhibited.

    So I did see bubbles in the wort as I was aerating but as soon as they hit the surface they dissipated.

    Yep, sounds like a typical foam inhibitor in action. :)
