Looking for a good Trappist Ale recipe. Not looking for a double or triple, want something that's tasty and Belgian, but not going to knock me on my rump. Planning on harvesting Chimay yeast for this. Thanks!

Do you use Beer Tools Pro? If you do I can email you the file. If not, I'll have to scan a copy. My Chimay Blue clone won 1st in class at the county fair and 2 of the local breweries who did the judging asked for the recipe. Neither one ended up brewing it though...

I did a weird patersbier thing with Ommegang's yeast, and it turned out really, really good. I just used pale and toasted two row, 1/2 lb of homemade dark candi, some honey, and lime zest. I bittered with cascades, and it rang in around 5% ABV. Just use tastybrew.com's calculator to put a recipe together. It's wicked easy.

The only other beer would be a Blonde. A dark or golden strong would be high abv. Haven't tried a Blonde yet, but my Tripel is very nice. Brewing a BDSA in a few days.

Thanks for the responses! I use qbrew for my beer software. Not sure if the file will convert. The recipe sounds good if you don't mind sharing.
