Need feedback on untried wheat recipe with simcoe.

    Looking to try something different with an American style wheat and I came across this recipe last year but I cannot recall where I found it in order to double check it before making my first effort to brew it. I would like to know anyone's thoughts on this recipe especially the use of simcoe hops as a late addition aroma hop.

    5 lbs white wheat
    4 lbs pale malt
    1 lb flaked wheat
    8 oz honey malt
    0.5 oz magnum hops at 60 min
    0.5 oz simcoe hops at 5 min
    1.0 oz cascade hops at 0 min
    US-05 yeast
    mash at 152 for 60 min.

    Can't speak to the honey malt but otherwise looks good to me. I'd dry hop with some simcoe and cascade.

    I'm good with that recipe. 1/2# Honey malt per 5 gallons is fine. I like it.

    Maybe use some rice hulls in the mash. (I get stuck sparges with wheat)

    Thanks for reminding me about rice hulls and for the idea of dry hopping with these hops in addition to what I listed for the hop schedule. I think I am going to do a 10 gallon batch and ferment 5 gallons with US-05 and the other 5 gallons with Wyeast 1010 American wheat.

    Looks good! I'm interested to hear how well the honey malt & simcoe pair together.
