I saw your post in another section about buying a new kettle. I was wondering if you were upsizing a bit.

I need to start doing only 10 gallon batches and the kettles I have are not what I like so I upgraded to a 15 gallon Blichmann I may also need a 20 gallon boil kettle but I'll see how this goes.

Got my first commercial account. :ban: A Cafe across the street has ordered 2 cases of my Raspberry Wheat to see how it goes. At first he was reluctant to pay what I was asking but reconsidered it since he knows he'll still make a good profit. I did agree to print a special label with the Cafe's logo on it but it will still say it was brewed and bottled by Chappell Brewery.
I'll keep you all posted on how it goes.
They may be baby steps, but they're still steps. :D

Excellent! And good call making sure you get your props on the bottle. I always respect a restaraunt that will willingly tell or post who makes their beer. Besides, it's not like you made a custom recipe exclusive to them right? That's an extra 20%. ;)

Let me start by saying I'm not complaining nor am I boasting it's just that sales have exceeded production. I just spent 11 hours brewing back to back 10 gallon batches and it's not enough. I need to adjust my timing because it's way off. Ran out of labels, ran out of beer in 2 kegs for the tasters at the shop, and getting low on bottles to sell. This is happening much faster than expected and it's not even tourist season yet.
    Help Mr. Wizard!! :D

Sounds like a good problem to have. Sure, it will be a challenge and be difficult, but this was the goal right?! Congrats on the new troubles :D

I told ya Scott to bring out your bigger brewing system and get it up to speed. Sounds like your on a roll and time for larger brewing batches now. This sounds a lot better than no sales, congrats plus warmer weathers just around the corner, got suds?

It is nice to hear you got a good commercial order. You are now a private label!
I really wish you the best of luck.
Anything worth doing is never really easy so hang in there. You may need to bust out the bigger brewing systems soon, but keep a close eye on the cost. The death of a thousand cuts come from the small stuff and tax's.

Whew! Just read all 50 pages and I have to say that you are an inspiration. I've been wanting to go pro since I started some 20 years ago, but the military dictates where I'll be. But with retirement around the corner I figured I might go with brewing in my spare time and selling to local restaurants. I've even got the wife drawing up business plans for me should I be tempted to open up a real brewery.

You have helped convince me that it would be a good move to make. Also, that you can start small, which is what I wanted. Gives me hope. I wish you all the best.

And to offer some help for the above quoted text - have you thought about having a "guest" brewer every now and then? It would help with your lower-than-expected stockpile, and would possibly help another brewer who was thinking of going this route get his name out there. Plus would add a little variety to your arsenal.

Subscribed to see how big you get.

I am over here in Iraq and have been combing through this forum during my down time. I am wishing I could fast forward time so I can get back to the States and start home brewing again! Then use this money I have saved on deployment and start something up back in the Pacific Northwest. These last 90 days are going to drag.

Congrats my friend, you are an inspiration.

The beverage buyer for one of the local markets came into the shop tonight and after having a taster tray told me he wants my beer to sell in the market.
Now I need to buy 22 oz bottles and get to brewing. That 7 bbl system is getting delivered next week. I think my Nanobrewery is about to become one huge fermentation room. :D

Wow, I just finished reading this whole thread, what an inspiration!
I recently have made the plunge into trying to set up a Boutique Brewery. Right now I'm just in the financial planning stages and going through all the "laws, hoops and blockades" that my State has setup. I applaud your efforts and the realization of your Dream.
    Keep up the Great Work!!

Sales have been great. The 7bbl system was supposed to be delivered last week but has been set for this week instead. I'll still need to get some more equipment before I can use it and will be relying on 10 gallon batches for awhile. The 7bbl doesn't have a heat source for the boil kettle and I also need to either make or buy a chiller for it also. I'll also need a fermentation room big enough to hold a 7bbl fermenter. I'll need a larger grinder for the grain bill necessary to use a system of that size.

Have you talked to Matt at the CHI Company out of Antilope Calif.?
Matt builds tanks of all sizes for the wineries up in the Napa and Sonoma area to their specs not just selling off corny's, kegs and brewing equipment.
I bet you've already looked into what he has to offer.

Scott, I recall Matt also makes custom built equipment for the wineries besides standard SS containers. I would give Matt a shout he may have
some good numbers for you in dollar cost for your needs. Tell him Carl in Alameda sent you in his direction, Matt is also a HBT member.
Good hunting keep us updated. I have a friend that has a custom fab shop who specializes in SS, if intrested PM me.
