Multiple Step Mashing?

    With only a few handfuls of AG brews, all I have ever done is single infusion mashing. Found a new recipe I would like to try and before I give it a swing I want to make sure I have the Mash schedule figured out. It goes something like this:

    Mash Guidelines
    Amount Description Type Temp Time
    13.5 qt Saccharification Rest Infusion 154 F 45 min
    -- Mash Out Infusion 168 F 10 min
    -- Sparge Infusion 170 F 45 min

    So this looks to me like
    Strike at 154 F for 45 mins
    then add enough water to raise mash to 168 F.
    Wait 10 mins.
    (this is where i'm sketchy)
    Then raise temp to 170 F
    Wait 45 mins
    Then Sparge

    OR

    Raise temp to 170 F
    Take 45 mins to sparge (Slow drain I assume?)

    That's a single step mash with a mashout. Going from 168 to 170 is not going to accomplish anything.

    Do your sach rest, then do the mash out @ 168 and sparge as you normally would.
