Modified "no knead" with spent grain bread

    SPENT GRAIN BREAD:
    300g white
    100g wheat - or do another 100g white
    1 cup spent grains
    265 g water
    10 g salt
    1/4 teaspoon instant dry yeast
    1 tablespoon oil - optional
    1 tablespoon sugar - optional

    Mix - will be very wet - like a batter. Not a lot of mixing required. If you have no mixer, do the dry ingredients first, mix with a whisk (flour, sugar, salt , yeast), then add the wet (spent grains and water and oil) and mix lightly with a spoon. This is basically a "no knead" recipe.

    Let sit for about 12-18 hours. Can go longer (up to 24 hours) by reducing yeast to 1/8 t and/or by including the sugar.

    Heat a covered pot or dutch oven in the oven to 450F . Remove when it reaches 450F and scoop the batter into the pot - it will form a bit of a boule. About 30 minutes covered, and another 12 uncovered.
