Milk Stout Lactose

    Just got an extract kit for Milk Stout by Red Beaver and it doesn't say when to mix in the lactose. Any ideas? Does it go in when dry extract goes in? Thanks.

    Northern Brewers' instructions for a sweet stout has the lactose added at the beginning of the boil.

    you can add it really anytime during the boil. Most people add it with 10-15min left in the boil.

    I add mine with about 10 minutes left in the boil. A fellow brewer I know prefers to add his post fermentation, this way he can control the sweetness to whatever level he wants. He boils the lactose in a small amount of water and adds it straight to his keg as the lactose mixture is cooling.

    Another tip is to take several 6 oz samples of beer, boil up the lactose mixture and add different amounts to each beer sample. Once you find the level of sweetness you like, you can scale up the ratio to your batch size.

    For 6 gallon batches, I usually add 1/2 lb with 15 min left in my boil.
