I did my first yeast starter on my latest batch and it has had a messy blowoff.

I ferment in kegs (due to space constraints) in a temp-controlled chest freezer and I left the top partially open to minimize pressure buildup. It's been in the fermenter for about 36 hours at this point.

I'm leaving town on Thursday for 10 days, so my question is, do I clean it up? If so, how? I worry that by cleaning it, I'm touching it and therefore introducing it to bacteria. I worry if I don't clean it, it could potentially mold while I'm gone.

The good news is the chest freezer is practically full of CO2 at this point so I think would help if I were to just leave it.

    Thoughts?

Seal it up, hose it down, spray the top with Star San and put it back in the fridge with the blow off tube.

The problem with fermenting in kegs is you wont get a full 5 gallons of beer when you're done.
