A buddy and I cut out a paddle today and made it look pretty. Unfortunately it was created out of red elm hardwood. I am wondering if that is appropriate for mashing. I know in the smoking world you never use elm with meats, but since this is mashing only would it be safe? Anyone have any thoughts? I also know that pine gives off flavors, but haven't read anything about elm.

I would think any untreated hardwood would be fine.
