I forgot to add the 5.2 to the grain before mash in so I mixed in about 20 min. later. Now I have full conversion but the mash is very bitter/ acid. should I just hope for the best?
    THANKS

Bitter would be basic, Tart/sour would be acidic. Hope for the best. It probably will be fine. IMO 5.2 is a waste on most water.
