I brewed Northern Brewer's extract kit - SH2B (Single Hopped Best Bitter) - yesterday and everything went well, but the original gravity was quite a bit below what the instruction sheet thought it should be.

The sheet said OG - 1.045 and my hydrometer reading came out at 1.029 (adjusted for temp at roughly 68).

Any suggestions as to why the reading is so low?

Glad it helped. Revvy's original post and a lot of the others helped me a lot.
