long fermentation

    I' m looking for some ideas for brews that could use about ten months in the secondary. I'm leaving on deployment soon and would like something tasty when I get back. I prefer it to be extract or biab. I have been leaning towards an imperial stoudt but am open to all ideas.

    Imperial stout in a glass carboy could go the distance I believe.

    I have a Flander's Brown sour that I brewed in August that will be in primary until June/July. Mmmmmmmmmmmmm.......

    I made 10 gallons of apfelwine about a month before i left for my last deployment. 1 month in the primary, bottled, and 12 months of aging.
