I've got 3 eva dry for my 2 chest freezers and i rotate them around. When fermenting i can fill 2 of them up in <2 weeks. My storage freezer, which doesn't see much opening/closing might fill one up in a month.

Only complaint is in the 1 newer model i have (i think the "improved" one), the color beads don't work at the cold temps of the fridge. They work fine when at room temp. They hold a lot of water though so it's actually pretty easy to tell when they are getting full just by the weight.

Another shout out for the Eva Dry 500. I have 4 of them and love em. One in each of my keezers and one in the gun safe. The other I keep charged and ready to swap out. I've weighed them dry and wet and they hold 5 ounces of water. The Amazom link above is a fair price for one, but man that's jacked pricing for multiples.
Eva Dry has a pretty good price for 5 if you need multiples.

I've got three of the 333 series Eva-Dry that I rotate in and out of the kegerator. I got the first one from Amazon, but found a 2-pack I think at Costco that was a pretty fair price.

They feel expensive when you're buying them, but I've been using my first one since early 2016 and it still works fine.

Next time I might give something like this a try:

I could make a tray or something to hold them and just recharge in the oven.

I guess I haven't noticed condensation. The fermentation chamber is by a dehumidifier. I'd guess that would be the reason.
