Joe's Ancient Orange Mead recipe???

    Thinking about doing something like this next....except few questions...concerns...think it needs modified a bit...

    for one baker's yeast?...Fleischmann's etc? even if that gets really going that's going to top out at what around 10% ABV average?....yet see/hear about could go as as high as 14-15% ABV? I kinda would want that....or is other better brands like Red Star etc?....not going to be as clean either probably more yeasty/off flavors?....

    And Why leave any Fruit in Primary that long...that's just asking for more off flavors/blows a lot of that fruit character off anyways with CO2/Airlock..more/harder time clearing?...wouldn't be better to rack it off fruit like way earlier/go secondary....thinking be hell of a lot cleaner in the end....

    Sounds like a brew that's going to Finish too damn Sweet or too damn dry Depending... and fact that its whole fruit...think it would be better to really mash it up or go straining/mesh bag....kinda iffy you ask me, might try it, add few other things.

    I'm not a mead maker or drinker but made it according to the original recipe. I have not enjoyed any of the mead that I've sampled but the recipe made it sound tasty. Anyway, it is excellent. I followed the directions and the mead did just as it was supposed to do with the bottle becoming perfectly clear and then the fruit falling. I will do it again.

    It sounds interesting for sure. I just really like Oranges haha, seriously a great fruit lol

    Short form: the recipe is carefully crafted to work AS-IS. If you use a different yeast, or mess with it, it won't end well. At least, thats my simplified distillation of hundreds of pages of posts about JAOM that I read before making a batch.

    Just a playful joke - but I hope the metaphor stands. JAOM works as is. If you try to dress it up or play with it, it might fail. Better find a recipe that better matches what you want in the first place.
