So I tried to make a pretty standard American Wheat Beer from the recipe here:

    http://www.google.com/url?sa=t&rct=j&q=homebrewtalk%20american%20wheat%20beer&source=web&cd=1&ved=0CCYQFjAA&url=http%3A%2F%2Fwww.homebrewtalk.com%2Ff70%2Fall-grain-american-wheat-beer-2nd-place-best-show-2011-hbt-bjcp-competition-238940%2F&ei=bcNST5WyEsultweL0JzIDQ&usg=AFQjCNEXXt3DQbzNxjg5BWcOfOPFzMMkRQ&cad=rja

Funny thing is, I never noticed it bubble. I tried lowering the temperatures and I waited and waited. Nothing. I just recently built my fermentation chamber so the temperatures were swinging wildly during fermentation. I opened it today to pitch more yeast and I noticed some residual krausen!! So I took my water bottles out and took a gravity reading and bam. What do you know? 1.010 final gravity. Full fermentation.

So I guess tomorrow I'm bottling some beer!! :p

Yeah I'll probably be going to carboy from now on whenever possible. I've got one, don't know why I chose bucket that night. Oh well. Will probably be good beer. Hit my numbers fine!
