Impromptu brew day. What can i brew?

    Looking for ideas here with what i have on hand... just brewing a small batch on the stove since it's really windy here today. Looking to brew a 2.5-3 gallon batch.

    Here's what i have on hand...
    13 lbs 2 row
    12 lbs irish stout malt
    3 lbs munich
    3-4 lbs vienna

    And ramdom 1 lb already opened bags of roasted barley, flaked barley, honey malt, torrified wheat malt, chocolate malt, and a few ozs of amber malt.

    I have some washed sa05, jasper magic ipa yeast, and jasper Belgian Abbey ale yeast.

    I have random hops too. 1 oz chinook, 1 oz simcoe, some homegrown cascade, and some other high aa hop that i cant recall.

    I was hoping for an amber of some sort. I know i can do an ipa and a stout but i have both of those in the primary now.

    Decisions, Decisions....

    Do a SMASH. I did a SMASH with Golden Promise and Simcoe recently. Turned out really good.

    Fun! You may have already made your decision, but here's what I'd do with what you have for a 2.5 gallon batch...a sort of amber ale, I guess...

    Mash @ 149F
    3lb 8oz Vienna
    1lb Munich
    4oz Amber
    2oz Chocolate

    0.5 oz Cascade @ FWH
    0.5 oz Cascade @ 10min
    1 oz Cascade @ flameout

    US-05

    Should get you about 1.048-1.050 (depending on your eff), roughly 30 ibus depending on the alpha % of your homegrown Cascades (I calculated using 5.5% alpha), and middle of the color range for an American amber.

    Thanks man. I am looking for an amber type beer. I haven't decided what im brewing yet but will within a few hours. I'll enter this into beersmith and see what it looks like. I appreciate it!!

    I did a hoppy amber type beer. Nailed all the numbers according to beersmith

    Three Day Weekend ale

    3 gallons

    5 lbs 2 row
    2.5 lbs munich

    .65 oz Jarrylo @ FWH (60 min)
    .60 oz Simcoe- WP
    .60 oz Chinook- WP

    House blend yeast of Jasper magic IPA and washed sa05

    Mashed @ 152 degrees for 60 min with 2.5 gallons (1.30 qts x 7.5 lbs of grist)
    sparged with 2.5 gallons

    FG: 1.066
    IBU: 50
    SRM: 8
    Potential ABV: 6.8%

    Looking forward to this one. Nice and easy brew I did while playing with the kids. I even used the no chill method as I have been for the past few indoor batches. I just put the lid on the kettle and come back the next evening. If I whirlpool hops, like I did in this one, I wait about 30-45 minutes until it gets down to 190-180 degrees and add the hops then.
