how much do flavors settle down over time?

    I'm brewing a belgian dubbel with orange zest and coriander, 7 days into the fermentation I took a hydrometer reading which was still a couple points high.

    I tasted it and it had an almost overwhelming spicy flavor, it's hard to say whether it comes from the coriander or the yeast.

    Is this something that might mature out?

    I know it's really early, I'm not worried, just curious. it already tastes better than some of these blue moon spiced beers that I've tasted recently.

    Dubbels are meant to age for several months, so you should be fine.

    Yep. 3+ months. Don't judge it what you're tasting now.
