how long once I keg before I should start carbing?

I already have a keg but need to get a CO2 tank and a regulator. If I keg the beer next weekend, how long can I keep it in there before I get the CO2 tank? Would a month be ok or is that too long?

if you don't have the CO2, you could always naturally carb (think of the keg as one big bottle) with 1/3 cup sugar and then you don't have to worry about it. You won't be able to really serve until you get the CO2, but at least it'll be ready for you when you do.

CO2 really does not make a major difference in storing beer. The real question is weather your specific beer will do ok for a month with or without CO2.

I would also say that depending upon headspace in the keg, natural carbing might be a good idea like mentioned before. Otherwise you may run a risk of oxidation. Generally when I keg, I will fill with co2, release the gas and repeat two more times before I fill for a final time (thus reducing oxygen availability for oxidation).

On that note, filling with co2 creates an internal pressure that will help seal the keg. Not saying that it won't be sealed without it, it will simply have a better seal with pressure.
