Help w/Hops 7 batches, 35 gal for $117

    I have working on this concept for a while. I was trying to figure out how to brew 7 - 5 gal batches for close to 100 bucks. I hit the LHBS today and this is the outcome. All double crushed for BIAB.

    50 # sack of Briess 2 row
    18 # Briess White Wheat
    1 # Muntons Crystal 60L
    1 # Muntons Chocolate


    There will be 3 wheat beers that will use 6# of Wheat and 4# of 2 row and some 60L/Choc experiment.

    That leaves me with 38# of 2 row for 4 batches.

    Hops

    3 oz of Tett 3.9% = 1 oz per 3 batches of Wheat/Dunkel

    Here's where I need help and am clueless

    2 oz Columbus 17.8%
    2 oz Galaxy 15.0%
    2 oz Falconers Flight 9.1%
    2 oz Galena 13.9%


    I am not stuck on a SMaSH. I have no problem mixing up the hops for bittering and others for flavor/aroma. There will also be some left over 60L/Choc to play with in the 2 row batches. I can also steal 1/3 # of wheat for some head retention?

    Yeast

    1 pack S -05 It will be back to back batches pitched on 1/2 +/- of previous yeast cake for the PA's

    1 pack S -06 Already had...Back to back on previous yeast cakes for the wheat



    Total was $116.92



    To start of I brewed 5gal of Dunkel today

    6 # W Wheat
    4 # 2 Row
    6 oz 60L
    5 oz Choc


    5.5 gal to 160f for 1 hr mash at 152....on the money
    2.1 gal sparge at 170f
    60 min boil and 1 oz of Tett


    Hit an OG of 1.052....on the money. I lowered my water from previous notes on my last Dunkel

    5.25 gal in the fermenter @ 62f

    1.052 off to a good start

    The next batch will be 10# 2 row. I can play with a little 60L/Choc/Wheat and the Hops from above.


    Help a fellow out with your Hop opinions or point me in the right direction to learn more about them please. The idea is to keep 10 lbs of base malts and learn how the specialty malts and hops can greatly alter the flavor.

    2nd recipe for 5.5 gal

    10 # 2 Row
    4 oz White Wheat
    4 oz 60L
    2 oz Choc

    .5 oz Columbus @ 60 min 17.8%
    .5 oz Galaxy @ 30 min 15%
    .5 oz Galaxy @ 15 min 15%
    1 oz Galaxy @ Flame out 15%

    Do you have the option to add additional hops to your inventory? What you have is not much to work with, at least not in terms of showcasing the flavors/aromas of the hops you selected.

    So far all my brews have been PA's in the 40-50 ibu range utilizing 2-2.5 oz of hops. They have turned out great and fit my style. I figured 2 oz per batch. The above recipe is 70 ibu's. After reading it seems I should add more hops towards the end to showcase them and keep the ibu's in check. I have yet to try dry-hopping. I might add some more hops in later but this was my winter budget for the next few batches.

    I am just trying to work on house blends that are drinkable all night. Trying to steer away from cascade and the typical clones. Perhaps this is bad timing since hops bombs are favored.
