Probably some kind of crystal malt would be the way to go. But, if you only have vienna and roasted barley handy......Got to go with the vienna, if that's all you got.

How about toasting some 2-row in the oven at 350 degrees for about 25-30 minutes?

The lady at the brew shop the other day told me that victory and biscuit are essentially the same. I don't know how accurate that is, but that's what she told me. I don't have any experience with victory to say one way or the other.

If you have biscuit, use that.

If not, toast some basemalt (two-row or Vienna) in the oven at 350 for about 15 minutes, then stir it and toast some more until it smells like you're baking bread and the malt is golden brown. I think about 20-25 minutes total is what I did, and it was great!

Let it cool, and if you have time to let it sit in a paper bag for a week, that's even better. If you don't, no big deal, you can use it right after toasting.

Agreed with yooper. I've done it many times with two row. It works best if you do it in thin layers.

Or, take your malt and pour it in a air pop popcorn maker and run it until you get a baked bread like smell

Cool idea,Ill have to try that sometime. Although there are good suggestions, there really is a difference between all of them,so therefore I say maybe use some crisp brown malt but like half or 1/4 the amount you would victory. Although Ive read victory and buiscuit are the same,I dont think so but equally add a nice character. There are alot of good subs but I think for the most part they will be somewhat equally different beers comparably. Ive toasted malt and its good just not the same but different and good in its own way.
