Germerican pils.

    So tomorrow night I am brewing this recipe, it's a german pilsner with American hops SMaSH lager.
    10 gallons
    85% eff.
    20lbs german pils malt
    Mash 152 for 90 min

    Boil 90 minutes
    1.5oz Simcoe 60min
    .5oz Simcoe 20min
    1oz Simcoe 10 min
    1oz whirlpool 20min

    Fermenting half with wlp830 German lager and half with wlp838 at 52 degrees

    Has anybody used either of these yeast? I used 838 in a black lager one time but the roasted barley I used dominated the taste of anything else. Just looking to see what the difference is on them

    Also considering substituting the hops with German Opal hops to be a traditional pils

    I actually like the use of Simcoe. I put the recipe into BeerSmith really quickly and I'm getting 57 IBU 6.2%; the beer is kind of like an IPL. Nothing wrong with that, it sounds tasty actually. I've used WLP830 (in the form of SafLager 34/70) with much success. Never tried 838 though so can't help you there

    I say go for it, the only thing I would change is add dry hops before packaging

    Only reason I don't want to dry hop is I'm looking for something perfectly clear, but if lagered long enough it will.

    So brew day went alright today. I boiled of a frigging ton so ended up with 9.25 gallons, just letting it chill to 48 till I pitched both strains of yeast

    Although not the same grain bill, it's very close to American Pale Ale Russian River Row 2 Hill 56 Clone. The hop schedule is very close to yours, and with 2 oz. of dry hops, it comes out crystal clear after cold crashing. I also whirlpool the last oz. for 30 min. at 170

    I actually have never heard of that beer before, but it is very similar for hop schedule. I'm excited to see how it comes out. Krausen just stared to form, it's at 52 degrees

    If yours turns out close to R2H56, your going to love it! I kicked a keg of it Saturday, brewed it again on Sunday.

    Started the lager last night. I wish it had attenuated a little more but it got down to 1.011fit a grand total of %6.1 percent. Tasted realy good. The Simcoe's shine through the crispness of the pils

    Alright so I pulled a sample from each fermentor.

    There is a good difference between both of these yeast which I'm excited about.

    WLL830 is much more balanced and WLP838 taste more hop forward.

    That is just from the sample pulled today. I'll post anew update after they are carbed and ready. Planning on lagering them another 35 days or so

    The pour. It's been 2 months at lager temps and it paid off

    That looks great, Jodell. I recently brewed a Sorachi Ace/Pilsner smash (using your recipe as a guideline) and tried it for the first time tonight. It's my first attempt at a lager and it is fantastic! It's only been bottled for two weeks or so though. I think I'm going to let it lager for a month before I start drinking it, it should get even better. In the mean time, I want to get some Simcoe and try brewing the recipe as written. Thanks for posting!

    Glad to hear you liked it! it is a very simple recipe for a first lager. Simcoes are slowly becoming my favorite hop, particularly for any lighter colored beer.
