I'm asking for my wine making friend.

He forgot to add the potassium metabisulfite when he went to bottle. Is there anything he can do to rescue the wine? Or do we need to drink it quickly before it spoils.

    thanks!

It shouldn't spoil. It may show some signs of oxidation with some age, but probably not for a long time depending on the ABV of the wine and the type of wine.

You've got a long time to worry. Drink at your leisure.
