FG Reading tastes kind of sour..need advice

    - Took the 2nd FG reading today to see if gravity is stable
    - Stable at 1.010
    - The FG reading I took 4 days prior to this was the same, some sort of sour off taste.
    - Girlfriend tried it, I didnt tell her I thought it was sour because it might influence her taste, but she said the same thing. Tastes a bit sour
    - Smell is also unpleasant

    I'm really not sure what to do. The FG reading alone is almost hard for me to stomach after I get that sour taste in my mind.. I was planning on dry hopping today but i'm not sure if I should waste more hops on a potentially bad batch of beer.

    This was my first AG batch and I ended up with about 3.5 gallons approximately when I was supposed to have 5
    Recipe called for .5 lb of corn sugar at the end of boil to boost the alcohol. I'm afraid that with the less than intended volume I ruined it with the corn sugar.

    I just dont know what to do now... any advice is appreciated..

    First thing I would do is give it time. the beer is what a week out of fermentation, room temp and non carbonated?

    the flavor is going to change quite a bit as it ages. What was the OG? If its a high gravity beer might take up to 8 weks for it to fully mature.

    Also if you post your recipie, mash temps, yeast used, fermentation temp etc it might help the community to figure it out.

    Ok sry heres the whole scoop:
    Supposed to be an IIPA, OG was supposed to be about 1.067 and 5 gallons.
    This was my first AG, Efficiency was terrible. I ended up with about 3.5 gallons and the OG was 1.056...with the corn sugar!

    11 lbs Maris Otter
    .5 lb Carapils
    .5 lb Flaked Oats
    .5 lb corn sugar (last 15 mins of boil)
    Safale US-05

    .5 oz Colombus (60)
    1 oz Citra (15)
    1 oz Colombus (15)
    1 oz Citra (Flameout)
    1 oz Colombus (Flameout)

    I brewed this on Aug 2nd..lag time was a bit longer..i pitched dry and on top and i didnt notice fermentation until Aug 4th... so its now been about 15 days since I noticed an active fermentation. It isnt a strong beer and shouldnt need a great deal of time. I'm just concerned something in the process has made this beer unquaffable.

    I know most would say wait it out but I'm honestly thinking of dumping the batch. My other brews' gravity readings were so tasty, this one just tastes off.

    I have something weird going on with a Pliny clone I just brewed. I used the "old" recipe with mash hops, warrior and chinook. vs the new recipe I've always used. Also my first brew since moving to Austin from PA so I'm going from being on a well to being on city water. I just tried it out of the keg and something is way wrong. I've never had a batch turn out like this, I've never had a bad batch even. This is seriously likely to get dumped. I am going to let it sit in the keg and see if it evolves, but as of now.. major issues.
