I don't have a thermowell, but do you think it would be ok to simply feed my long STC 1000 temp probe down my blowoff tube and into the carboy? It seems like it would work well

I can't really think of a reason not to, as long as you sanitize it first.

Personally before doing that I would just insulate it some and tape to the side of the carboy

fold up some paper towel and tape the probe to the side of the carboy. what you are suggesting is not a good idea, i dont think the stc1000 probe is water proof.

carboy -> probe -> folded paper towel -> tape.

I used to tape it to the side and cover with bubble wrap

    Don't do that!
The plastic from the probe and cord will dissolve in alcohol. Beer may creep inside too.

Like said above, use on outside with some insulation, or inside in a thermowell.

I routinely use my stc-1000 probe in a water bath. That seems to work just fine.

Tape it to the outside, not worth the chance of infection.
