I recently brewed this fantastic IPA but the longer it sat the worst it started tasting. I tried to carb this in a keg and googled at what temp and PSI I should set it to. I cannot remember where I read (or thought I read) that I should set the PSI on 18. Learning now that it should be around 10 PSI and am beginning to wonder if that is what made it progressively taste bad. At first it was fantastic very balance and fresh tasting. After about 10-14 days it started to taste bad. My question is what kind of off flavors are associated with high levels of carbonation? Thanks in advance for your wisdom!
