I've been thinking of taking a stainless steel tube and mounting the sensor from the ST-1000.

That way I could stick the SS Tube through the rubber stopper like a probe thermometer and get the temp from the center of the carboy.

Am I over complicating things again?

    Has anyone else done this?
    Thanks

I use a thermowell for mine. I do have to adjust the refrigerator's thermostat so that the air temp in the fridge doesn't get too low and cause the liquid temp to drop lower than I want.
