diacetyl rest for apricot lager

    I'm going to add canned apricots to my apricot lager in the secondary and my question is should i do a diacetyl rest in the primary now or do it after the slight fermentation from the apricots two weeks later or do a diacetyl rest twice (primary and secondary).

    While I'm no lager expert, I've done a couple and I get the mechanics behind a D-rest.

    I'd say you might even want to add the apricots, wait until there is active fermentation, then slooooowly raise the temperature over the course of 24-48 hours, do the D-rest as long as you normally would and then proceed as usual.
