Crazy Idea or Not?

    I washed yeast from a batch on 3/25/11... almost a year ago. Earlier this week I decided to make a 1L starter with it. Everything looks and smells pretty normal. It fermented out a little longer but everything indicates it's healthy. I'm planning on stepping it up at least one more time.

    Here's the the crazy part: Am I nuts to pitch this in a 5 gallon batch of RIS around 1.110? :cross:

    If it's viable and you can get the culture big enough in the step up I wouldnt worry about it. I recently tried to fire up a starter of a nw ale culture I harvested almost a year ago just for kicks and it took off like a champ, I'm thinking I'll use one of its brother cultures next week for a brew.

    I'd step it up and go for it! MrMalty would be of some use to get a decent pitching rate. Good luck!

    i should have noted that this is wyeast 1056. mr. malty says about 1162ml from 3/25/11!!
