Crazy fermentation and fruit flies

    Hi all. I'm brewing my second beer, a citrus witbier. I didn't know about blow off tubes until an hour ago. Because of that, I now have a lot of krausen inside the carboy, in the air lock, and on the air lock. It is the gunk on the air lock that bothers me as it has attracted fruit flies. So far, no flies in the air lock and the carboy is still completely sealed. Am I still safe? How should I go about safely removing the bung and air lock as not to have debris and fruit flies enter my beer before bottling. Thanks!

    I would soak a paper towel in your sanitizing solution and wipe the outside of the bung and carboy lip off before removing. I use paper towels a lot to do things like this.

    Take a piece of aluminum foil and sanatize it. Then take the airlock and bung out and cover the mouth of the carboy with the sanatized side of the aluninum foil. Clean the airlock and bung, then reinsert them into the carboy, and fill the airlock with either sanitizer or vodka.

    Or both. I recently started using 80 proof white lightnin' mixed 50/50 with Starsan in my airlocks. I also cut the tip off an old "S" type airlock & inserted it into a length of 3/8" tubing for a blow off. The other end in a half gallon plastic vodka jug filled 1/3 with water & a splash of Starsan.
