I am fermenting a RR Consecration all grain kit right now. The fermentation instructions stated I will need to age it for 6-12 months to achieve adequate souring. I was wondering if anyone had experience with that kit or a similar style beer and if so how long you had to let it go before getting an appropriate souring. I am using the Roselare 3763 blend.

    Thanks
