I have a corny carbonating in the fridge right now with the co2 tank in the fridge with it. Been trying to keep it at around 11psi. It required a little tweaking the first few days, but then it leveled off and stayed at 11psi consistently for 36 hours.

Then randomly it jumped up to 15psi today. I quickly bled it and adjusted back down to 11psi. Any idea why that could have happened?

    Thanks

Do you have any temperature changes? Old regulator? Fermentation?
Using an older regulator it took me a few tries to get it dialed in. Taking the poppit(i think thats what its called) off of the keg and then adjusting the psi helped a little. But getting it set just right took a few tries for me.

No temperature changes, definitely no fermentation, but the regulator is old and a little messed up(there's water in one of the gauges).

So you set the PSI with the popit off?

That's the best advice I have. I have one valve on a regulator that I had so many issues with that I only use it for quick carbing to get a seal. On a keg. You can always replace the psi gauge part for around 10 bucks maybe less.
