Cider ingrediants

    Ey all I'm new to all this but I am after a supplier for cider yeast and maybe a few additives I've had a few rubs with apple juice, mead, grape wine and elder berry most turned out ok but I'm sure it could be better the problem I'm having is the taste always seems to be to overpowering and in your face. I've used general purpose yeast and desert yeast. I'm pretty sure you could power a rocket with it so maybe I used to much sugar? Or would be better off with different yeast? Cider could be alot better need advice help!

    Give an example of one of your recipes you used that turned out too powerful. Include the ingredients and how much of each, and what batch size did you make. Include your OG, FG, and specific yeast strain, if known.

    4.5 litres of apple juice 1kg bag of sugar and a desert yeast I think the og was maybe 1200 or 1155 and fg is 1000 I'm not sure without my notes in working away at the mo

    Each are gallon batches and I also added half a lemon and lime to the cider

    A kg of sugar in 4.5 l of juice does sound rather high.
    To put some scale on it, EdWorts Apfelwein, which is quite popular around here, is typically made with 5 gallons of juice (~19 l) and 2 lbs of sugar (just under a kg) to make the final ABV around 8-8.5%
    I'd imagine yours is rather pushing the limits of your yeast.
