Is there a DIY out there that converts a sanke to a conical? If not how about a way to get an air tight seal after you cut it open to put the ball valve in?

    :off: Sorry Guys!

I guess paying that price for bins in a commercial kitchen makes sense, especially if they last forever. No way I can come up with that sort of jack for residential use though. (I wish I could they look nice).

There is a mircobrew pub near me that ferments in 55 gal food grade barrels. He drops in a food grade liner and away he goes. No clean up either, just drop in a new liner and you're good to go again.
