Is it possible to use the stainless barrels from bubbasbarrels.com or usedstainlessbarrels.com to force carbonate?

What kind of pressure do they hold?

The barrels are not designed to handle pressure. I don't have my book with me but I think 10 psi is the max pressure of the open head drums I have. The lid bows up in the middle and flies off.

Most closed head drums are less are even less suitable.
