So i bottled my first batch 7 days ago and couldn't wait and opened one last night. Good carb and good head but still a touch green. I have been reading 2-3 weeks to bottle condition. Is it normal to be carb'd after only 7 days?

It's not unheard of. It all depends on the OG, temperature, type of priming sugar and how much healthy yeast is in suspension.

My first ever beer was that quick too. I had a lot of sediment carried over into the bottles though so that's my guess why it happened.
