brewing beer leads to happy life

I am trying to create my own house ale. I have already made about 5 different versions trying to stumble upon the trick.

I want it to be similar to newcastle and nut browns but without the powerful nut flavor. I want a nice carmel sweetness but without a pronounced chocolate taste. I made a beer recently that is good but it ended up a bit to dark for my tastes and with too much chocolate. Its almost porter. I want a nice maltly unique flavor with balanced hop presence.

here is what I am thinking as a start.

    90 min mash 153 90 min boil
    74% eff

    8lb maris otter
    .75 carapils
    .5 biscuit
    .5 crystal 80
    .5 crystal 120
    .5 special b
    1.25 oz EKG 75 min
    Whitbread 1099 ale yeast

    1.053
    23.5 IBUs
    18.5 SRM
    5.1 ABV

    Primary 21 days at 65
    cold crash and keg

That looks like it should accomplish your goal. With a full pound of crystal in it you can probably omit or at least reduce the carapils if you wish though, otherwise it looks like a tasty beer!
