    I love 3068. That is my go-to yeast for hefeweizens. I tried 3638 once and didn't really like the outcome. Granted, there were probably other contributing factors such as fermentation temperature control and the OG of the wort. (I diluted the 3638 batch a little too much I think... OG was 1.045 with the 3638 batch when the OG with my first 3068 batch was 1.053). I've got a similar AG recipe that I am going to try in the coming months. Let me know how yours turns out.

    Well the brew didn't quite turn out as i wanted i didn't get the o.g i wanted, shooting for 1.055 only got 1.040. I'm pitching the yeast now, hopefully there will be some magic during fermentation....
