BEERSMITH question

    I was looking at one of the recipes and saw this..

    Mash Steps:

    1. Mash in - add 3.44 gal of water at 169.4 F 60 min
    2. Mash out - add 2.20 gal of water at 194 F 10 min

    Fly Sparge with 2.45 gal of water at 168.1 F


    This is supposed to be a 5 gallon batch with a boil volume of 6.52 gal.

    if you add all of the mash in, out and sparge, it becomes 8.09 gal of wort.

    What is beersmith saying? also, what is "fly" sparge?

    This accounts for losses in your system. Grain absorption, dead space at the bottom of your mash run, etc. You can change these losses in BS to match your system. The sparging method can also be changed. I have the older version so I am not sure how to do it in the new one but I know it can be done.

    to change your mash method just click on mash style button and select a new method ie single infusion, medium body, batch sparge. when you fly sparge once you have mashed you very slowly drain your mash tun and replace it with your sparge water at the same rate it drains. the process should take about an hour or so if done right
