There is probably a thread on this, but I couldn't find it. I have a winter sitting on gas in my keggerator, but I'm not serving it until next weekend. It has been on for a week, so I'm sure the beer is fully carbonated. Should I leave it there, or take it off the gas until next weekend? Any thoughts would be helpful, thanks.

Leave it on. Whatever method that you use to carb your beer you still need to leave it on gas for serving purposes until the keg is empty, generally around 8-12 PSI depending on the style your serving.

And unless you have it at a very high psi, it's going to take longer than a week to be properly carbed.

once it has reached equilibrium, staying on gas will not have a negative effect (unless you are forcing in gas at like 30+ psi, then you want to turn it down once desired pressure is reached).
