American Stout Aging and Tincture

    I just brewed a 5gal batch of JZ's American Stout from "Classic Styles." Planning on pulling off a couple gallons to try some tinctures of vanilla bean, cacao, coffee, etc... I am also planning on letting the beer age until Xmas. My questions are two...
    If anyone is familiar with the recipe, does it need much aging?
    Should I wait until after the aging for the tincture, or add it right away?
