American Citra-Wheat - Appropriate Carb

    Got a recipe from a LHBS and gave a slight modification. Swapped the cascade aroma hops with citra and added coriander and some zest. Brewed last week and am gonna rack to secondary tomorrow. After the sulphur smell of the Wyeast 1010 subsided it smelled very citrusy. I'm looking forward to it.

    8.0 oz White Wheat Malt (2.4 SRM) Grain 1 6.5 %
    4.0 oz Special Roast (50.0 SRM) Grain 2 3.2 %
    7 lbs Wheat Liquid Extract (8.0 SRM) Extract 3 90.3 %
    1.00 oz Cascade [5.50 %] - Boil 60.0 min Hop 4 14.9 IBUs
    1.00 tsp Irish Moss (Boil 15.0 mins) Fining
    0.50 oz Cascade [5.50 %] - Boil 15.0 min Hop 6 3.7 IBUs
    0.50 oz Coriander Seed (Boil 15.0 mins) Spice
    1.7 oz Tangelo, Orange and Lemon Zest
    1.00 oz Citra [13.70 %] - Boil 5.0 min Hop 8 6.7 IBUs
    0.50 oz Cascade [5.50 %] - Boil 5.0 min Hop 9 1.5 IBUs
    1.0 pkg American Wheat Ale (Wyeast Labs #1010) [124.21 ml]

    Its a 5 gallon batch and I have high hopes for it. I want to be positive I give enough priming sugar, because I like a well carbonated beer. Hate spending several weeks on a beer to find that the head is too small, doesn't stay or that there just aren't enough bubbles forming.

    Does anybody have any recommendations on how much sugar to use? I feel like what is recommended is never enough. I know I'm gonna use at least 3/4 cup of table sugar. Any other suggestions?

    Style guidelines for an American Wheat calls for a carbonation level of 2.3 to 2.6 volumes (I'm assuming the style from the yeast). I like my wheat beer with heavier carbonation...about 3 volumes. Per beersmith this is what you need assuming your bottling.
    For 2.3 volumes at 70F 3.93oz corn sugar for 5 gallons
    For 2.6 volumes at 70F 4.73oz corn sugar for 5 gallons
    For 3 volumes at 70F 5.8oz corn sugar for 5 gallons

    I force carbonate at 15psi at 34F and I think the carbonation is perfect.
